People are always asking me how to eat and cook healthy food, so here’s a great recipe I whipped up tonight!
This yummy meal left us literally LICKING the leftovers!
I also MAY have licked the bowl, fork, and spoon in my prep…but you’ll never know!
The Sauce costs approximately $5 for an all organic sauce and not only tastes WAY better than store packages, BUT it’s a million times healthier than eating MSG or artificial flavors and chemicals (which are in most causes).
This was super easy to make and I fit it in to a packed schedule today.
Prep Time :20 minutes
Cook Time: 30 minutes (including rice side dish)
Serves: 4 (with extra marinade below)
Ingredients;

2 skinless, boneless chicken breasts (didn’t use organic, but still high-grade meat)

3/4 can Organic Coconut Milk (full fat) (I recommend this brand) it’s in BPA free can
-
3 TBSP Organic Olive Oil
-
1 TSP Organic Cumin
-
1 & 1/2 TSP Organic Sea Salt (use ground version or 1tsp for mineral salt)
-
Optional–1 TBSP Organic Cane Sugar (I did 1 &1/2 TSP because we don’t use a lot of sugar)

2 TSP Organic Lemon Curry Powder
-
Juice and zest of 1 Organic Lime
-
1/4 cup sliced cilantro
Directions ;

Slice chicken breasts in half width wise

Cut chicken breasts in half

Place chicken breasts into a large bag
-
Pound chicken to the same thickness (I added cuts for more marinade absorption).

Make your marinade;
-
Adding 3/4 Cup of your Coconut Milk
-
Add your 3 TBSP oil
-
Add your dry spices (salt, sugar, cumin, and curry powder)
-
Add the zest of the lime and juice
-

Stir your marinade and add to the bag
-
You can choose to put enough marinade to cover the chicken breasts and save the rest for adding sauce later on
-
OR you can add all the marinade to the bad and then make sure you pour the extra marinade and bring to BOIL for at least 3 minutes before consuming.

Put the chicken in the fridge until you’re ready to cook and go run your errands!

Stove top or grill chicken

Pour marinade into a small saucepan and boil if it came out of the bag.

Chop cilantro
-
Make rice–I suggest Organic Jasmine Rice :)

Cut another lime if desired for additional juice on top of chicken.
Serving;

Put the rice on the plate (substitute steamed organic veggies)

Place chicken on top
-
Drizzle some marinade on top
-
Add cilantro and lime to test!
